In my opinion, the "it just works" thing is a myth. Macs do benefit from Apple being completely mental about keeping everything out but stuff they approve, but they also suffer from it. I bought a Mac for video editing, and it's been OK... but I'm not completely won-over.
As far as recording goes... for multitrack, I still think a dedicated hardware unit is best. I have a Korg D3200, and like it just fine. I do stereo mix-down onto a Linux PC running Audacity, but for my money you can't beat the performance of a dedicated device for multitrack.
