Who was it who observed that if you could wave a wand and magically, instantly eliminate all knowledge of the earth's religions, people wouldn't reinvent the same ones -- the probability is infinitesimal that you'd get Christianity again, for instance -- but if you magically, instantly eliminated all knowledge of science, we'd rediscover a very similar body of knowledge, because it simply does so well at explaining how the world works!

The difference between science and religion, yes.  If we're discussing something real, the vast majority of those who study a phenomenon will eventually arrive at more or less a consensus.

In religion, as time goes on, the interpretation of the phenomenon diverges wildly.
